Abstract

The difficulty of introducing resistant starch (RS) into the diet and increasing its intake persists despite several research showing that RS has a significant impact on improving food's nutritional content and preventing disease. Of the five known RS types, only RS2 and RS3 have undergone thorough research and received widespread media coverage. In conclusion, this chapter offers intriguing information about the possible role of RS in the management of human health and additional investigation into the mechanism it plays. it is evident that resistant starch has a lot of potential to be incorporated into food systems to provide a wide range of health benefits, from reducing the risk of colon cancer to managing weight loss and preventing type 2 diabetes.
